Dave's Chicken Lemonaise
This Recipe Makes: 4-6 servings. I've doubled this successfully for larger parties!
|3||Whole chicken breasts|
|aprox 3/4 cup||Mayonnaise|
|1/2 cup||Bread Crumbs|
|1/2 cup||fresh chopped onion|
|1 1/2 cups||water|
|3||chicken flavored bouillon cubes|
|1/4 cup||chopped parsley|
|3 tbsps||lemon juice (I use 5. Gives it more zing! DM)|
Brush chicken with mayonnaise, coat with bread crumbs. In skillet melt 3 tablespoons of margarine over medium heat. Cook chicken, 3 pieces at a time. 15 minutes or until tender, keep warm. In saucepan saute' onion in 2 tablespoons of margarine. Stir in flour until well blended. Gradually stir in water. Add bouillon cube, parsley and lemon juice. Cook and stir until mixture boils. Add 1/2 cup of mayonnaise; cook and stir until hot. Spoon sause over chicken
This goes great with chicken flavored Rice-a-Roni and your favorite veggie!
