I didn't know it was so in demand.........hmmm....mabe I should hold out.......What'll ya give me for it?????

Ok, here it is....if it's wrong, blame Aunt Kaye, I think that's where I got it. And of course, as with the rest of the Vassale recipes, there are no directions or exact amounts, so I am just filling them in as I go along.

Manicotti:
Shells: 8 Eggs, 2 cups of flour, 2 cups of water, salt (notice there is no amount?), Mix all ingredients until smoothe. Pour 1/8 cup batter into small fry pan. Fry like pancakes (turn when edges dry).


Filling: 3lbs ricotta cheese, 2-4 (I use 4) eggs, romano cheese, parsely, salt to taste. I use a pretty lot of cheese, and you should use enough parsely that you can "see" it in the cheese.

Line baking pan with small about of "gravy". Fill and roll each shell with 1 tablespoon of cheese mixture. Lay them single layer overlapping in baking pan. Cover with more gravy. Bake them untill they are hot (no degrees? 350 I assume).


Sorry about the lack of precise directions, but from what I can see, this is how all the recipes in our family go!!! It's a taste and see recipe!
