Dave's Chicken Lemonaise
This Recipe Makes: 4-6 servings. I've doubled this successfully for larger parties!

3 | Whole chicken breasts | ||||||
aprox 3/4 cup | Mayonnaise | ||||||
1/2 cup | Bread Crumbs | ||||||
5 tbsps | Margarine | ||||||
1/2 cup | fresh chopped onion | ||||||
3 tbsps | flour | ||||||
1 1/2 cups | water | ||||||
3 | chicken flavored bouillon cubes | ||||||
1/4 cup | chopped parsley | ||||||
3 tbsps | lemon juice (I use 5. Gives it more zing! DM) |
Brush chicken with mayonnaise, coat with bread crumbs. In skillet melt 3 tablespoons of margarine over medium heat. Cook chicken, 3 pieces at a time. 15 minutes or until tender, keep warm. In saucepan saute' onion in 2 tablespoons of margarine. Stir in flour until well blended. Gradually stir in water. Add bouillon cube, parsley and lemon juice. Cook and stir until mixture boils. Add 1/2 cup of mayonnaise; cook and stir until hot. Spoon sause over chicken
This goes great with chicken flavored Rice-a-Roni and your favorite veggie!
